The base for this very special cooking holiday experience is Odyssey Centre, which is situated 50
mtrs from the beach, in the small Mediterranean coastal hamlet of Askeli on Poros Island; Poros
Island is 35 miles south west of Athens in the Saronic Gulf region of Greece. Katerina Sakelliou is
owner of Odyssey Centre and will be your host for the duration of your 7- night stay. Katerina was
born in Poros, is passionate about cooking is a professional chef with an intense interest and
knowledge in the historical roots of Greek cooking, Katerina specialises in both traditional and
modern Greek cooking.
Katerina's skills have become very sought after, when she is not hosting courses in Poros or
preparing and supervising menus at her Odyssey restaurant in Askeli, she also provides lessons in
Greek cooking throughout other parts of Europe, including the recently formed Aphrodite Project in
Holland combining interests in art throughout the centuries and ancient Greek cooking recipes.

The ancient Greeks were one of the first to discover the advantages of adding herbs and spices to
their food.
This process was used not only to enhance the tastes, but also provided medicinal benefits. Greek
food is still to this day, a unique amalgamation of fresh, seasonal ingredients and a generous blend
of these herbs and spices, E.G thyme, rosemary and oregano - which grow all over Greece. Fish –
Greece is surrounded by the Mediterranean Sea and has one of the largest coastal areas of any
country in Europe, for this reason fish are integral to Greek food. Fresh seasonal vegetables are also
a significant element in traditional Greek cooking. Greek food would not be Greek without the Olive
Oil, Olives are grown and
olive oil produced in many parts of Greece, including the local region.
This presentation of this holiday course will be very friendly and personal. Each course will be limited
to a maximum of 10 guests. Participants will have fun, pleasure and excitement. Most of all, they will
experience real Greek culture, cooking and delicious food - during this unique cooking holiday
adventure.



A FUN PACKED TRUE GREEK EXPERIENCE Course itinerary
DAY 1: Katerina Sakelliou will welcome and meet you anytime after midday; you have the afternoon
free to explore Askeli, relax by the pool, or enjoy the pleasures of a swim in the clear blue
sea. In the evening you will be a guest at the welcome dinner. Katerina will introduce you to
some of the food that you will learn to cook during your stay.
DAY 2: After breakfast, you will be provided with your first Greek Language session exploring the
menus and recipes with Greek language. Lunch will be served around 12.30, afterwards you
may like to take a stroll into Poros town or a local walk followed by a swim at Love Bay.
Around 14.30 your first lesson begins, this will be followed by a late afternoon drink or a
small siesta, before returning around 17.00 to cook the final stages of dinner which will be
served in the balmy and relaxed evening atmosphere of Odyssey Centre.
DAY 3: After an earlier than usual breakfast we will take a walk into Poros Harbour to visit the fish
market where we will pick out and select a range of ingredients for today’s lesson. This will
be followed by a visit to a local café for coffee and Greek pastries After lunch at Odyssey, the
early part of the afternoon is free. Mid afternoon we will start to prepare the evening meal
from the fish selected at the market, we might decide on bar – b- q with the fish, along with
some freshly prepared [ by you] Greek salads, fish sauces, roasted vegetables, some herb
dressings. We will then enjoy dinner in a relaxed sociable style late into the evening at
Odyssey Centre.
DAY 4:Today will include a visit to another island, Aegina, Hydra, or Methana peninsula with lunch
provided. During our journey we will collect local produce for today’s lesson of the traditional
Greek metzes. After our return to Odyssey we will then learn to cook and serve this during
the evening in the traditional Greek style.
DAY 5: This is a free day for you to explore Poros Island, Mainland Greece, or just relax by the beach
or pool. Lunch will be provided at Odyssey around 13.00. Dinner will be served around
20.00 in Odyssey
DAY 6: After breakfast an opportunity will be provided for those who wish to have another Greek
language lesson, this will be followed by a visit to either our own lemon or olive grove to
learn about the use of both these ingredients in Greek cooking, a picnic lunch will be
provided. On returning to Odyssey in mid afternoon we will begin our final cooking lesson, a
Greek classic, Mousakka , Pistachio, or Souvlaki . Dinner will then be served at Odyssey.
DAY 7: Depending on the season - today we will again make some local visits to learn about the
important seasonal nature of ingredients in Greek cooking, this may also include collecting
local herbs, flowers and visiting local farms. Lunch will be provided either at Odyssey or
picnic. Tonight is the finale dinner this will be a true Greek experience with many surprises!!!
DAY 8:Breakfast and depart at your leisure.
ACCOMMODATION
Odyssey Centre is based on 9 large maisonettes style residences, situated in the peaceful coastal
hamlet of Askeli on Poros Island. The residences have en suite, facilities air con, private terrace and
overlook Askeli Bay. They are located adjacent to Odyssey cooking school facilities. Each of the 9
residences have an individual layout, suitable for singles, couples and groups of up to 5. The beach
is located 1-minute walk away and for Odyssey guests’ access to a private pool is 1-minute walk
away. During your holiday you will wine and dine at the Odyssey restaurant, which is also adjacent to
the residences.

WHEN TO COME TO POROS
The island of Poros enjoys the typical Mediterranean climate. During April, May and June, the island
is very tranquil, with warm days and mild evenings. Poros is a popular location with many Greek
people during July and August. In peak summer months the island population increases
significantly, although Askeli still remains relatively peaceful, it can be very warm both day and night
particularly during August. September is an ideal month for those who prefer quieter times slightly
cooler than August, but with warm seas, and is often referred to as one of the best months to visit
Poros. October through to December can see the some wet spells but generally the weather is still
warm and mild with average temperature in October around 23C. No matter when you come to Poros
you will find it both welcoming and interesting for whatever reason you visit.
