    Greek recipe for you:

    Tzatziki:

    1 Cucumber
    500 grammes of thick Greek yogurt
    3 Garlic Gloves
    Half teaspoon salt or to taste
    Sprinkle of pepper.

    Wash and grate the cucumber with the
    skin on, remove all liquid [water] from
    grated cucumber by squeezing between
    hands - finely crush garlic and add salt
    and pepper mix all ingredients together
    and place in fridge for at least
    30 minutes before serving.
    As a variation add either mint or dill.

Your host for all our Greek cooking activities at Odyssey centre is Katerina Sakelliou.
Katerina is passionate about cooking and is interested and knowledgeable in the
historical roots of traditional Greek cooking, Katerina specialises in both traditional
and modern Greek cooking. Katerina's skills have become very sought after and when
she is not giving lessons in Poros or preparing and supervising the meals at Odyssey
Bistro in Askeli, she also provides lessons in Greek cooking throughout other parts of
Europe.

The ancient Greeks were one of the first to discover the advantages of adding herbs and spices to their food. This process was used not only to
enhance the tastes, but also provided medicinal benefits. Greek food is still to this day, a unique amalgamation of fresh, seasonal ingredients
and a generous blend of these herbs and spices, E.G thyme, rosemary and oregano which grow all over Greece. Greece is surrounded by the
Mediterranean sea and has one of the largest coastal areas of any country in Europe, for this reason fish and shellfish are integral to Greek food.
Fresh seasonal vegetables are also a significant element in traditional Greek cooking. Greek food would not be Greek without the Olive Oil,
nowadays recognised as part of a healthy diet [containing mono - unsaturated fat] Olives are grown and olive oil produced in many parts of
Greece.
